Similar to Navy beans, Cannellini's have a creamy texture and are a perfect addition to classic Italian dishes like Minestrone.
HEARTY MINESTRONE: On medium heat, add a splash of oil to a large stockpot. Add chopped onion, carrot, celery, tomato paste and a pinch of salt and stir often for about 8 minutes. Add some crushed garlic, oregano and thyme; stir for a few minutes. Add a can of diced tomatoes, a litre of vegetable stock, a few bay leaves and lots of cracked pepper. Bring to the boil, then simmer for 15-20mins. Add EBO Organic Cannellini Beans, two handfuls of small pasta shapes and simmer for a further 15 minutes or until pasta is just cooked. Season with salt and pepper to taste.

Add to soups, salads, or stews.
